Ingredients
- 2-3 T evoo
- 2 cloves garlic, minced
- 1/2 yellow onion, finely chopped
- 1 c finely chopped carrot
- 2 c finely chopped mushroom
- 1 small red bell pepper, finely chopped
- 2 lbs tomatoes, chopped
- 2 T basil
- salt and pepper to taste
Preparation
Step 1
l. Heat oil in large skillet over medium heat. Add garlic and onion and cook for 4-5 minutes, then add carrot, mushrooms, and bell peppers and cook til veggies are tender, about 10 min.
2. Increase heat to high. Add tomatoes and their juice, the basil, and the salt and pepper to taste. Bring to a boil then reduce heat to medium and cook, uncovered, til thickened, about 15 min.
serve over pasta
