Spinach & Tomato Salad

Ingredients
- FOR THE VINAIGRETTE, WHISK:
- 2 2 2 Tbsp. olive oil
- 1 1 1 Tbsp. each white wine vinegar and fresh lemon juice
- 1 1 1 Tbsp. minced scallion whites
- 1 1 1 tsp. each Dijon mustard and honey
- to and black pepper to taste
- FOR THE SALAD, TOSS:
- 1 1 1 pkg. fresh baby spinach (5 oz.)
- 1 1 1 cup quartered baby heirloom tomatoes
- 1/2 1/2 1/2 cup purchased Asiago or Parmesan cheese crisps, or croutons
- 1/4 1/4 1/4 cup minced scallion greens
Preparation
Step 1
For the vinaigrette, whisk together oil, vinegar, lemon juice, scallion whites, Dijon, and honey; season with salt and pepper.
For the salad, toss spinach, tomatoes, cheese crisps, and scallion greens with vinaigrette; serve immediately.
