Ingredients
- 2 cups quinoa
- 1 garlic clove
- 3/4 tsp. salt
- 2 tbsp. fresh lemon juice
- 1/2 tsp. black pepper
- 5 tb sp. olive oil plus more for drizzling
- 1 X 15.5 oz. can chickpeas, drained and rinsed
- 1/2 cup diced red pepper
- 1 pkg. fresh baby spinach leaves
Preparation
Step 1
Bring a pot of salted water to a boil; add the quinoa and cookl until just tender, about 12 mins. Drain well.
Place minced garlic into a bowl with salt, lemon juice, black pepper. Whisk in the oil.
Add the cooked quinoa, chickpeas and peppers to the bowl and mix. Serve over spinach and drizzle with olive oil.
