Ingredients
- 1/4 tsp. each: ground cumin, ground coriander, cinnamon, salt and fresh ginger
- 1 tbsp. fresh lemon juice
- 1 tbsp. olive oil
- 1 red bell pepper, diced
- 1/4 red onion diced, or 3 green onions, sliced
- 2 cups whole wheat couscous
- 3 tbsp. raisins
- 1/4 cup toasted pine nuts
Preparation
Step 1
Stir spices together in a bowl. Add lemon juice and oil. Add vegetables and raisins and toss.
Cook couscous. Fluff with a fork. Fold in the spice mixture and pine nuts. Garnish with chopped parsley if desired.
Serve.
