Ingredients
- 1 cup bulgur wheat
- 1 packed cup chopped parsley
- 1/4 cup fresh lemon juice
- 2 tbsp. olive oil
- pinch salt, cumin and dried mint
- 8 oz. medium, shelled, thawed shrimp
- 1 cucumber, seeded and chopped
- 1 cup chopped tomato
- 1 cup chopped green onions
- 1/4 cup crumbled feta
Preparation
Step 1
Bring 1 1/2 cups water to a boil in a pot and add bulgur. Bring the liquid back to a boil and then cover. Turn off the heat. Let sit 25 mins.
Meanwhile, in a bowl whisk together 1 tsp. of the parsley, lemon juice, oil, salt, cumin and mint.
Bring a small pot of water to a boil. Add the shrimp and simmer for 1 1/2 mins. Drain.
Place bulgur in a bowl and toss with shrimp, cucumber, tomato, onion, feta, the remaining parsley and dressing. Serve at room temp or chilled.
