Quinoa and Black Bean Pilaf

Ingredients

  • 1/2 cup vegetable or chicken broth
  • 1/4 cup quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced red onion
  • 1/4 cup finely chopped red or green pepper

Preparation

Step 1

In a pot, bring broth and quinoa to a boil. Reduce heat and simmer, covered, for 6 mins. Add beans, onion and pepper.
