Ingredients
- 21/2 lbs sweet potato, cut up into squares
- 1/4 cup lime juice
- 11/2 tsp white vinegar
- 11/2 Tbs marmelade
- 1 tsp thyme
- 1 tsp cumin
- 5 large radishes
- 15 oz can balck beans,rinsed
- 2 navel oranges, cut into supremes
- 4 scallions
Preparation
Step 1
Steam potatoes until just tender
layer on cookie sheet and sprinkle with 11/2 Tbs lime juice. Let cool.
In dish put remaining lime juice, vinegar, marmalade,thyme ,cumin, salt and pepper. Whisk in oil.
In serving bow mix sweet pots, with dressing and add radish, beans, oranges and scallions
