Chicken, mushroom and goat cheese wraps

Ingredients

  • Spread:
  • 12 ounces sliced mushrooms
  • 1 rotisserie chicken
  • 2 roasted red peppers
  • 130 gram pkg. goat cheese
  • 8 small whole wheat tortillas
  • 1/4 cup sun-dried tomato pesto or wasabi spread.
  • Wasabi spread:
  • 1/4 cup light mayonnaise
  • 1 tsp. hot chili-garlic sauce
  • 1 tsp. wasabi paste

Preparation

Step 1

Lightly oil a large frying pan and set over medium-high heat. Add mushrooms. Sprinkle with salt and pepper. Cook, stirring occasionally, until mushrooms soften slightly, about 5 mins. Meanwhile, remove and discard skin from chicken, then pull off meat and tear or cut into bite-sized strips. Pat peppers dry and slice into strips. Arrange all wrap ingredients on a large platter. Place spread in samll bowl. Arrange on table for make-your-own wraps.
