Ingredients
- 3 cups vegetable stock
- 4 cups broccoli florets, chopped
- 1 cup onion, chopped
- 1 carrot, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 minced garlic cloves
- 3 oz half and half
- 4 oz shredded, reduced fat cheddar cheese
- 1/4 cup parsley (optional)
Preparation
Step 1
Combine vegetable stock, broccoli, onion, carrot, salt, pepper and garlic in a large saucepan.
Bring to boil
Reduce heat and simmer until broccoli is tender
Turn off heat
Mix soup with hand blender (or pour into blender) until smooth
Immediately stir in creamer, cheese and parsley
Serve
