Pie: Chocolate Peanut Butter Pie

Ingredients

  • 1 refrigerated rolled pie crust(from 15-ounce package)
  • 3 eggs
  • 1 C. light corn syrup
  • 1/2 C. sugar
  • 1/2 C. chunky peanut butter
  • 1/2 tsp vanilla extract
  • 1/2 C. semi sweet chocolate chips
  • 1 tub frozen whipped topping

Preparation

Step 1

1) Heat oven to 375*F. Fit pie crust into a 9-inch pie plate/ Flute if desired. Refrigerate while preparing filling.

2) In a small bowl, lightly beat eggs with a fork. Stir in corn syrup, sugar, peanut butter, and vanilla extract; mix until completely blended.

3) Remove pie crust from refrigerator and sprinkle with chocolate chips then pour peanut butter mixture over top. Cover edge of pie with aluminum foil.

4) Bake pie at 375*F for 20 minutes; remove foil. Bake an additional 15 to 20 minutes or until knife inserted near center comes out clean. Cover and chill for 2 hours. Garnish with whipped topping, remaining chocolate chips.
