Ingredients
- Shells:
- 1 cup flour
- 1 tbsp. Shortening
- 1 tsp. Sugar
- 1/4 tsp. Salt
- 1/2 marsala wine or water
- Vegetable oil
- Filling:
- 3 cups polly-o whole milk ricotta cheese
- 1/2 cup sifted powdered sugar
- 1/2 tsp. Vanilla
- 1/4 tsp. Ground cinnamon
- 1/2 cup miniature semi-sweet chocolate chips
- 3 tbsp. Each chopped citron and candled orange peel

Step 1
Shells: mix flour, shortening, sugar and salt. Gradually add wine, kneading with fingers until stiff dough forms, adding more wine, if necessary. Shape into ball. Cover with cloth; let stand 1 hour. Cut dough in half. Roll ½ of the dough into thin sheets, about 12-inch square. Trim edges, cut into sixths. Heat 2 inches of oil in dutch oven on medium heat to 375 degree f. Carefully add shells, a few at a time; cook 2 minutes or until golden brown. Remove from pan; let cool. Gently remove shells from metal tubes. Repeat with remaining dough. Makes 1 dozen.
