Ingredients
- 2 tbsp. extravirgin olive oil
- 3 shallots, minced
- 2 cloves garlic, minced
- 14 oz. chicken stock
- 1 cup orzo pasta
- 1/2 cup grated parmesan cheese
- 1/3 cup fresh basil, chopped
- kosher salt
- freshly ground black pepper
Preparation
Step 1
Add the extravirgin olive oil to a large saucepan and heat over medium-high heat. Add the minced shallot and garlic and saute for 2 minutes. Add the chicken broth and bring to a boil. Add the orzo and stir. Reduce heat to medium-low and cover. Simmer until the orzo absorbs all the liquid, about 15 minutes. Remove from heat; add the parmesan cheese and basil and mix well. Season with salt and pepper and serve.
