Pickled Onions

Ingredients

  • 1/2 of a red onion
  • 1/4 c. red wine vinegar
  • 2 t. sugar

Preparation

Step 1

Peel, halve and thinly slice the onion. In a small pan, combine the vinegar, sugar and the onion. Heat to boiling on high. Once boiling, cook stirring occasionally 2 minutes or until the onion has softened and the liquid is slightly reduced in volume. Transfer to a heat proof bowl and set aside to pickle, stirring occasionally, for at least 10 minutes. Drain liquid off before serving.

Serve as a garnish in Mexican food, burgers, etc.
