Pumpkin Gooey Cake Bites

This recipe was originally for Chocolate S'mores Gooey Cake Bars. I changed it just a little bit for the holiday season. This came out SO VERY GOOD. I do not like pumpkin anything, but these are AWESOME

Ingredients

  • 1 box Perfectly Pumpkin cake mix
  • 1 Large egg
  • 1 stick unsalted butter ( softened )
  • 4 1/2 graham crackers
  • 10 oz bag white chips ( I used Ghiradelli )
  • 2 cups mini marshmellows
  • 1/2 sweetened condensed milk

Preparation

Step 1

preheat oven 350 degrees
Line an 8x8 pan with foil overlay all 4 sides ( trust me)
Generously spray baking dish

Place cake mix, egg, and butter into a large mixing bowl. Mix with hands until a nice moist dough forms. Similar to cookie dough.
Press half of the dough into the bottom of the baking dish.
Layer with graham crackers ( they fit perfect) white chips then marshmellows.
Top with remaining half of dough pressing evenly. Drizzle with Condensed milk over the top.

Bake for 28-33 minutes or until cooked through and golden brown on top.
Remove from oven. Let cool for 5 minutes and take a knife around the foil/bars.
THEN let it cool completely. I found that letting it 100% cool makes it a lot easier to cut.

Cut into bite size pieces. No more than 1" big. They are very rich and to cut them into bars is a little too sweet. Bite size works perfect.

I saved the edges to snack on. The edges are the best part.
