BEAN SALAD WITH LEMON AND HERBS

Ingredients

  • 2 cups fresh cooked shell beans (cannellini or cranberry) or 14 oz can cannellini or chickpeas, rinsed
  • 6 oz green beans, trimmed, cut into 1 inch pieces
  • 1/4 cup fresh parsley leaves with tender stems
  • 1/4 cup olive oil
  • 3 tblsp chopped fresh chives
  • 2 tblsp chopped capers
  • 1 tblsp finely grated lemon zest
  • 2 tblsp lemon juice
  • 1/2 tsp Aleppo pepper or 1/4 crushed red pepper flakes
  • Salt and pepper

Toss ingredients in a large bowl; season with salt and pepper.
