Loaded Baked Potato Salad

Ingredients

  • 4 lbs. russet potatoes
  • 1-2 tbsp. olive oil
  • 3 tbsp. apple cider vinegar
  • 1 c mayo
  • 3 \4 c sour cream
  • 1 tsp. salt and pepper
  • 1 lb. bacon cooked and chopped
  • & green onions , chopped
  • 1 1\2 c cheddar cheese, shredded

Preparation

Step 1

Preheat oven to 400 degrees
Pierce and lightly with olive oil bake for 50-60 minutes and let cool
Remove the skin and cut into pieces place in lg. bowl and sprinkle with applecider vinegar, let rest for 15 minutes
Cook the bacon drain and cool, crumble
Mix the mayoand sour cream add to potatoes, stir in bacon, green l ions and cheddar cheese
Refrigerate for 3 hrs.
