Ingredients
- 1 chicken spatchcocked or 2 cornish hens spatchcoked
- 4 garlic cloves, chopped
- 1 teaspoon kosher salt
- 6 tablespoons light butter
- 1 tablespoon chopped fresh thyme
- 2 tablespoons lemon zest,
- 3/4 teaspoon black pepper,
- 2 rosemary sprigs
- 2 pieces of quartered lemon
Preparation
Step 1
Preheat oven to 400 degrees
Line baking dish with aluminum foil for easy cleanup
Spray rack to hold chicken above pan
Combine garlic and salt on a cutting board . Using the flat edge of a knife, mash into a paste (or put in food processor). Combine garlic paste, butter, thyme, zest, and pepper in a bowl. Rub garlic mixture under skin of chicken breasts and thighs and outside of chicken as well.
Place one sprig of rosemary and piece of lemon inside cavity.
Baked in oven until chicken registers 160 degrees . Remove from oven and cover with foil. Rest until temperature reads 165 degrees.
