Pastry Cream, via Joyce

Ingredients

  • 6 xtra large yolks
  • 3/4 c. sugar
  • 3 Tb. cornstarch
  • 2 c. whole milk (half and half or heavy cream even better)
  • 2 Tb. butter
  • 1 t. vanilla
  • 2 Tb. heavy cream
  • 1 t. cognac

Preparation

Step 1

Whisk the first three together while the milk comes to a boil. Temper it in.
Add the last of the ingredients.
Bring to a boil. Put in ice bath and cover directly with plastic wrap.
