REUBEN QUESADILLA

Ingredients

  • Sauce:
  • 1/2 c mayo
  • 2 TBS ketchup
  • 2 TBS minced scallions
  • 1 TBS sweet pickle relish
  • 1 1/2 tap cider vinegar
  • Quesadilla:
  • 2 cups shredded Swiss cheese
  • 1 cup sauerkraut, drained
  • 1 tap caraway seeds
  • 8 OZ thinly sliced deli corned beef
  • 4 10" flour tortillas

Preparation

Step 1

Sauce - stir together all ingredients
Quesadilla:
For each tortilla. Arrange 1/2 cup Swiss, 1/4 cup sauerkraut, 1/4 tap caraway seeds and 2 OZ corned beef on half of each tortilla. Fold empty sides of tortillas over filling. Transfer to griddle and cook until golden on each side and Swiss is melted, about 5-6 minutes per side. Serve with sauce.
