Caramel Corn

Ingredients

  • 7 qrts plain popcorn (2 3.5 oz bags)
  • 2 c. dry roasted peanuts (optional)
  • 2 c. brown sugar
  • 1/2 c. light corn syrup
  • 1 tsp. salt
  • 1 c. margarine
  • 1/2 tsp baking soda
  • 1 tsp. vanilla extract

Preparation

Step 1

1. Place popped popcorn into 2 shallow, greased, baking pans. Add peanuts if using.

2. Preheat over to 250. Combine brown sugar, corn syrup, margarine, and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.

3. Remove from heat and stir in baking soda and vanilla. The mixture will be light and foamy. Immediately pour over popcorn in pans and stir to coat.

4. Bake 1 hour, removing pans and giving them a good stir every 15 minutes. Line the counter with waxed paper. Dump the corn out onto waxed paper and separate the pieces. Allow to cool completely.
