Step 1
In a large pot add 10 peeled and cubed potatoes, salt water and bring to boil then simmer 15 minutes until cooked. Drain in colander for 5 minutes. Return to pot and add 3 tbsp. butter, salt and pepper. Mash. Then add 2 egg yolks and 1/4 c heavy cream and pinch of nutmeg. Stir. Then on parchment lined paper prepared with butter, add dollop (will make 8) and use spoon to create well. Then freeze 15 minutes just to firm up. Then whisk 1 egg yolk and 2 tbsp. cream. Then brush on potatoes and place in pre heated 450 degree oven for 15 minutes. WE TRIED ON 7/7/17 AND THEY WERE VERY GOOD. CAN PUT GRAVY IN WELL.
