Spinach and Eggs Frittata

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 yellow onion, sliced
  • 1/2 tsp kosher salt, divided
  • 1 1/2 lb frozen spinach, thawed
  • 8 large eggs
  • 2 oz parmesan ceese, grated ( about 1/2 cup)
  • 3 tbsp whole or low fat milk
  • 1/4 tsp black pepper

Preparation

Step 1

preheat oven to 350 with rack in cente of oven. heat oil in a medium size oven proof skillet over medium. add onion and 1/4 tsp salt. cover and cook, stirring occasionally, until onion starts to soften and brown, 6 to 7 mins. uncover and cook, stirring occasionally, until golden brown, about 3 to 4mins.

while onion cooks, whisk together eggs, cheese, milk and pepper and remaining 1/4 tsp salt in a medium bowl.

Squeeze out the excess water from thawed spinach. add spinach to onion. cook over medium, stirring occasionally, until spinach is heated through. remove from heat. add egg mixture; gently stir until combined. bake in the oven until eggs are set, 15 to 18 mins. cut into wedges, and serve immediately.
