Ingredients
- 2 cups plus 3 Tablespoons all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground ginger
- 2 eggs, lightly beaten
- 1 1/2 cups mashed bananas (4-5 medium)
- 1 cup sugar
- 1/2 cup cooking oil or melted butter
- 1/4 cup plus 1/3 cup chopped walnuts
- 1/4 cup packed brown sugar
- 2 Tablespoons butter
Preparation
Step 1
Preheat oven to 350F. Grease bottom and 1/2 inch up the sides of one 9 X 5 X 3 inch loaf pan; set aside.
In large bowl combine 2 cups flour, baking powder, baking soda, cinnamon, salt, nutmeg, and ginger. Make a well in center of dry mixture; set aside.
In medium bowl combine eggs, mashed banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir until just moistened (batter should be lumpy). Fold in 1/4 cup walnuts. Pour mixture into prepared loaf pan and set aside.
In small bowl combine brown sugar and 3 tablespoons all-purpose flour. Using a pastry blender cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup walnuts. Sprinkle mixture on top of batter in loaf pan.
Bake 55 to 60 minutes or until toothpick inserted near center comes out clean. If necessary loosely cover with foil during last 15 minutes to prevent over-browning. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on rack. Wrap and store overnight before slicing into 16 slices.
