Ingredients
- 3 cups yellow squash
- 1 large sweet onions, coarsely chopped
- 1 teaspoon vegetable oil
- 4 tablespoon butter
- 1 cup mayonnaise
- 1-1/2 cheddar cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1-1/4 cup buttercrackers, crushed
- 1/4 cup paprika
- 1/2 teaspoon garlic powder
- salt and pepper, to taste
Preparation
Step 1
Preheat oven at 350. Heat the vegetables in a large skillet and cook the onions over medium to low heat until brown. Add squash. season and pepper to taste and cook until tender.
Remove from skillet from the heat and stir in the mayonnaise, 1 cup cup of cheddar cheese, 1 cup of crumbled crackers. paprika and garlic powder.
Pour the mixture into a 1=1/4 quart baking dish. Sprinkle with remaining cheese and top with remaining crushed butter crackers. Bake until the casserole is bubbly around edges, about25 minutes.
