Baked fish with capers and olives

Ingredients

  • 4 tsp. Olive oil divided
  • 2 lbs fish such as salmon or swordfish
  • 1 c. Drained canned tomatoes
  • 1 \2 tsp sugar
  • 1 tsp lemon juice
  • 1 tbs capers drained
  • 1 \4 pitted green olives
  • Pepper
  • 1 \2 unseasoned bread crumbs

Preparation

Step 1

Preheat to 400. Uses tsp olive oil to coat baking dish.
Chop tomatoes and mix with sugar and lemon juice. Add the capers and olives.
Pile tomato sauce on top of fish.
Distribute the crumbs over the top and drizzle on 3tsp on top.
Bake 35 min.
