Ingredients
- 2 or 3 heads Broccoli Rabe
- 3 or 4 Cloves garlic (for me, the more the better)
- Olive Oil
- Salt & Pepper
- 2 Tbsp. Tomato Paste
- 2 Tbsp. Tomato Sauce
- Splash of White Wine
- 1/2 c. Water
- Red Pepper Flakes (as much as you like)
- 1 Knorr's Chicken Boullion Cube (crushed)
- Sausage removed from it's casing
Preparation
Step 1
If using pasta, prepare according to directions on box.
Cut off tough ends & bad leaves from Broccoli Rabe - chop into 2" to 3" pcs. - rinse well & set aside.
Chop or slice garlic
Remove sausage from casings & brown in pan with a little olive oil. When browned, remove sausage from pan & set aside.
Add garlic to pan the sausage was in - saute on low heat (don't let it get too brown) and add red pepper flakes, salt & pepper, & crushed boullion cube.
Add tomato paste, stir to break it up, and add about 1/2 c. water to pan, saute for a bit.
Add sausage back to pan, with a little more olive oil.
Add the broccoli rabe & stir. Add a few pinches more of salt. The broccoli rabe will wilt down like spinach.
Add a few splashes of the white wine & the tomato sauce. Let this simmer on low/med heat until the broccoli rabe becomes tender, and a nice sauce develops.
That's it !!! You can put it over whatever pasta you like, or just eat it plain!! Enjoy !!!
