Green Salad with Chorizo Chips

Ingredients

  • 6 oz. dry chorizo, very thinly sliced
  • 1 1/2 T sherry vinegar
  • 1 T minced shallots
  • 1/4 C olive oil
  • Salt & pepper
  • 2 thinly sliced celery ribs
  • 4 thinly sliced large radishes
  • 3/4 C sliced Spanish green olives
  • 4 oz mesclun
  • 2 heads torn baby Bibb lettuce

Preparation

Step 1

Line large plate with paper towels. Arrange chorizo slices on plate; cover with paper towel & microwave 1 min. If not browned, cover & microwave for 20 second intervals until done Transfer to plate to cool.

In large bowl, whisk vinegar & shallots with olive oil & generous pinch of salt & pepper. Add celery, radishes, olives, mesclun & Bibb lettuce; toss to coat. Sprinkle with chorizo chips & serve.
