Navy Bean Soup

Ingredients

  • 1 lb dry navy beans
  • 1 smoked ham hock or jowl
  • 4 quarts water
  • 1 C chopped onion
  • 1/2 C chopped celery
  • 1/2 C chopped carrots
  • 1 1/2 T minced garlic

Preparation

Step 1

Sort beans and pick out the bad ones. Wash and soak in the fridge for 8-12 hours.

In a large stock pot over high heat add the Beans, ham hock, and 2 quarts of water. Bring to a boil then reduce heat to med. for 1hour.

Add vegetables and garlic and cook for 2 hours.

Season with salt and pepper and mash with a potato masher.
