Ingredients
- 1 Lemon cake mix
- 1 lge. can crushed pineapple
- 2 eggs
- 1/4 t lemon flavoring
- 1 pkg instant vanilla pudding mix
- 8 oz Cool Whip
- Coconut
- Walnuts
Preparation
Step 1
Drain the crushed pineapple, using 1 1/3 C of the juice as liquid in the cake mix.
In a large bowl, combine cake mix, pineapple juice, eggs & lemon flavoring; mix well.
Bake in greased & floured cookie sheet at 350 for 15 min.or until toothpick test is clear.
ICING:
Beat together vanilla pudding mix with 1 C milk until thick. Fold in Cool Whip & mix well. Fold in squeezed dried crushed pineapple. Ice cake
sprinkle top with 1 C coconut & 1 C chopped walnuts
