Potato Kugel

Ingredients

  • 8 medium potatoes, peeled and cut
  • 2 eggs
  • 4 medium onions, saute'd
  • small amount of matzo meal
  • salt and pepper to taste

Preparation

Step 1

Cook potatoes in water. Drain water and mash. Add eggs and saute'd onions. Add a small amount of matzo meal. (Too much will make the kugel dry.) Add salt and pepper to taste. Mix altogether.

Oil a baking dish. Add potato mixture. Take a fork and press down on potatoes. Bake at 375* until brown. (About 1 hour)
