Ingredients
- 1 1/2 pounds peeled Yukon gold potatoes
- 3 tablespoons olive oil
- 3 garlic cloves, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- chopped parsley (for garnish)
Preparation
Step 1
Dice potatoes into cubes. Toss with olive oil, garlic, salt, pepper and oregano. Place potatoes in a glass baking dish and add lemon juice and broth. Bake at 425 degrees for about 30 minutes or until potatoes are tender. Toss with chopped parsley.
