Roasted Broccoli Hollandaise

This is an easy recipe to make. It is good with or without the bread crumbs.

Ingredients
- 1 1/2 pounds broccoli (approx. 6 cups)
- 2 tablespoons olive oil
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 .9 ounce package Hollandaise Sauce Mix
- optional
- 1 cup Panko Bread Crumbs
- 2 tablespoons butter
- 3 cloves garlic, minced
Preparation
Step 1
Preheat the oven to 450°F.
Cut the broccoli into florets and toss with the olive oil, salt, pepper and garlic powder. Place on a aluminum foil lined baking sheet and roast for 15 minutes, turning halfway through.
Make the hollandaise sauce according to package directions. Keep warm.
Remove the broccoli from the oven and place in a serving bowl. Toss with enough hollandaise to coat.
Serve immediately or top with optional bread crumbs
Bread Crumbs
While the broccoli is roasting, melt the butter in a large skillet.
Add the garlic, stir and cook until fragrant, then add the bread crumbs tossing to coat in the butter and garlic.
Cook until the bread crumbs are brown and toasted, about 5 minutes.

Hollandaise Sauce = 40 calories per 1/4 cup
