Strawberry Pie

Ingredients

  • 1 Baked 9 Inch Pie Shell
  • 1 Quart Fresh Strawberries
  • 1 Cup White Sugar plus 1/2 reserved for whipped cream
  • 3 Tablespoons Cornstarch
  • 3/4 Cup Water
  • 1/2 Cup Heavy Cream
  • 1/4 Tsp. Vanilla

Preparation

Step 1

Arrange half of strawberries in baked pie shell
Mash remaining strawberries and combine with sugar in medium saucepan. Place saucepan over medium heat and bring to boil stirring frequently.

In small bowl whisk together cornstarch and water and gradually stir cornstarch mixture into boiling strawberry mixture.

Reduce heat and simmer until thick about 10 minutes stirring constantly.

Pour mixture over berries in the pie shell.
Refrigerate

Whip heavy cream with remaining sugar and vanilla.
After pie has gelled, top with whipped cream.
