Chicken Broccoli Casserole

Ingredients

  • 1 package ( 20 ounce ) frozen chopped broccoli
  • 5 cups cooked long grain rice
  • 2 1/2 cups cubed cooked chicken
  • 2 cans ( 10 3/4 ounces each ) condensed cream of chicken soup
  • 1 cup mayonnaise
  • 2 cups ( 8 ounces ) mozzarella cheese shredded, divided

Preparation

Step 1

Preheat oven to 350
1. Place frozen broccoli in a colander and run under hot water; drain thoroughly . Spread on bottom of a sprayed 13x9 inch baking dish. Spoon rice over top.
2. Combine chicken, soup, mayonnaise and 1 cup of the cheese. Pour over rice. Sprinkle with remaining cheese . ( Dish will be quite full. ) Bake 30 to 35 minutes or until heated through. Watch carefully last few minutes. Cover with foil if cheese is Browning too fast. Makes 8 servings.
