Kale Walnut Saute

Ingredients

  • 2 bunches kale, trimmed & roughly chopped
  • 2 T olive oil
  • 2 cloves sliced garlic
  • 1 large Spanish onion, thinly sliced
  • 3/4 C roughly chopped toasted walnuts
  • 1 chopped jalaeno
  • 3/4 C chopped basil
  • 1/4 C chopped mint
  • 1 1/2 C pomegranate seeds
  • 4 pork chops, grilled

Preparation

Step 1

Add kale to boiling water & cover; Blanch @ 2 min. Strain & toss dry. Wive pot clean.

Set pot over med-hi heat. Add olive oil, garlic & onion. Saute until lightly carmelized, @ 6 min.
Stir in walnuts & jalapeno; cook until aromatic,@ 3 min. Stir in kale & herbs; cook until softened, @ 4min. Season with salt to taste.

Off heat, mix 1/2 of pomegranate seeds to kale & toss to mix,

Serve with grilled pork chops over kale & topped with remaining pomegranate seeds.
