Mango Jam

Ingredients

  • 4 large mangoes, peeled and cubed--about 4 cups
  • 2 1/2 cups fine cane sugar
  • 4 tsp. lemon zest, plus 6 Tbsp. fresh juice, from 2 lemons
  • 1 Tbsp. finely chopped ginger

Preparation

Step 1

combine mangoes, sugar, zest, lemon juice and ginger in a large heavy bottomed saucepan. Bring to a boil and over medium heat, stirring often. reduce to medium-low, and cook, stirring often, until mixture appears glossy and thickened, 45-60 minutes.
Store jam in an airtight container in the refrigerator, for up to 1 month.
