Ingredients
- 1 lb. boneless chicken, cut into 1" pieces
- 3/4 lb. rigatoni
- 2 T olive oil
- 2 t minced garlic
- 2 medium tomatoes, quartered and sliced
- 3 c steamed but crisp broccoli flowerets
- 2 (15 oz) cans Contadina marinara sauce (or other marinara sauce)
- 1 (2 1/4 oz.) can sliced ripe olives
- salt, pepper and parmesan to taste
Preparation
Step 1
Heat marinara sauce in a small pan and keep warm. Cook pasta and drain. Mix with a small amount of marinara sauce to keep from sticking. In a large skillet, saute garlic and olive oil until golden. Add chicken and stir fry until nearly cooked. Add tomato slices, stir fry for 2 minutes. Add marinara sauce, pasta, broccoli and olives Heat through for 5 minutes, continually stirring. Sprinkle with salt and pepper, and serve with parmesan cheese
Accompany with green salad, Italian bread and red wine.
