Smoked Sausage Scramble

Ingredients

  • 1 medium potato, cubed
  • 1 tbsp chopped onion
  • 1 tbsp vegetable oil
  • 1 c. Torn fresh spinach
  • 1 c. Cubed fully cooked smoked sausage
  • 4 eggs
  • 1 tbsp water
  • 2 slices American cheese, diced

Preparation

Step 1

In a large skillet, cook the potato and onion in oil until potato is tender. Add spinach and sausage. In a bowl, whisk the eggs and water. Pour over sausage mixture. Cook over medium heat, stirring occasionally, until eggs are completely set. Top with cheese. Serve immediately.
