Bacon Cheddar Potato Cakes

These are made using leftover mashed potatoes.

Ingredients

  • 3 slices bacon, cooked and crumbled.
  • 4 cups cold leftover mashed potatoes
  • 2 eggs
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Preparation

Step 1

Stir all ingredients together. Form patties (1/2 inch thick).

Pour a small amount of vegetable oil in a large skillet and heat just to smoking. Turn down the heat and add the patties. Keep the heat down as the patties need to heat through without burning. Turn once so both sides will be browned and crispy.
