Instant Pot Beef Bourguignon

Ingredients

  • 1 lb Stewing Steak or Flank Steak
  • 1/2 lb BaconTips or Rashers will work
  • 5 Medium Carrotscut into sticks
  • 1 Large Red OnionPeeled and Sliced
  • 2 Cloves garlicMinced
  • 2 tsp Rock Salt
  • 2 tbsp Thymedried or fresh
  • 2 tbsp Parsleydried or fresh
  • 2 tsp Ground Black PepperOmit if on Full Elimination Diet (Stage 1 reintroduction)
  • 1 Cup Red Wine
  • 1/2 Cup Beef Broth/Stock
  • 1 tbsp Avocado Oil or Olive Oil
  • 2 Large Sweet Potato (White)Peeled & Cubed
  • 1 tbsp Maple Syrup

Preparation

Step 1

Switch Instant Pot to Browning Setting. Add one tbsp of Oil and warm
Pat Dry Beef and Season and then saute in batches to give them room in the Instant Pot to brown. Set aside.
Slice Bacon into thin strips and brown with onions
Add Back Beef and then add all remaining ingredients
Switch Instant Pot to High Pressure Setting and Set to 30 Minutes.
