Nut Cake

Ingredients

  • For the Glaze:
  • 4 eggs
  • 1 1/4 C sugar
  • 3/4 C vegetable oil
  • 3/4 C milk
  • 1 1/4 C ground hazelnuts
  • 2 1/4 C all-purpose flour
  • 1 Tbsp baking powder
  • 3 Tbsp hazelnut paste
  • 1/4 C sugar
  • 1/4 C water
  • 20 whole hazelnuts

Preparation

Step 1

Preheat oven to 400°F. Beat eggs and sugar until light and creamy. Add oil and milk. Briskly stir in ground nuts and flour mixed with baking powder.

Pour batter into prepared pan and bake in oven (bottom rack) for 40-45 minutes.

Meanwhile, melt hazelnut paste and sugar in water until thick enough to coat a spoon. Spread cooled cake with hazelnut glaze and decorate with whole hazelnuts.
