Winter Fruit Salad with Chia Seed Dressing

Ingredients
- Dressing:
- 3 tablespoons fresh lemon juice
- 1 tablespoon sugar
- 1/4 cup olive oil
- 3 tablespoons honey
- 2 teaspoons chia seeds
- Salad:
- 8 mandarin oranges or Clementines, peeled and segmented
- 4 apples, such as Gala, diced
- 5 kiwis, peeled and diced
- 4 bananas, peeled and diced
- 1 1/2 cups pomegranate seeds
Preparation
Step 1
Make dressing: In a mixing bowl or jar, whisk together lemon juice and sugar until dissolved. Mix in olive oil, honey and chia seeds.
Mix salad: In a salad bowl, toss together all the fruits and then pour dressing over the top and gently toss to coat. Serve immediately.
