Pear, Pea and Watercress Soup

Ingredients

  • 1 Tbsp butter
  • 1 small onion, finely chopped
  • 1 lb firm pears, peeled, cored and finely sliced
  • 2 lbs fresh peas, shelled (or use 1 2/3 lbs frozen peas)
  • 1/2 cup dry sherry
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper
  • pinch of ground mace
  • 4 cups chicken stock
  • 2 bunches watercress, stalks removed
  • 2 fresh or dried pears, thinly sliced

Preparation

Step 1

1. In a large saucepan, melt butter and add the onion pears and peas. Cook for 2-3 minutes over gentle heat. Add sherry and seasoning and cook, covered, for 20 minutes over low heat. Add stock and watercress and bring to a boil. Simmer for 15 minutes, then remove from heat and cool a little.
2. Blend soup until smooth, then sieve back into the saucepan. Gently reheat. Ladle into bowls and garnish with slices of pear.
