Southwestern Chopped Salad with Buttermilk Ranch Dressing

Ingredients

  • 1 Tbsp olive oil
  • 1 large chicken breast (1 lb), sliced in half horizontally
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt to taste
  • 1 head of romaine lettuce, chopped
  • 1 large orange bell pepper, chopped
  • 2 medium tomatoes, chopped
  • 2 avocados, chopped
  • 4 green onions, chopped
  • 15 oz can black beans, drained, rinsed
  • 1 cup corn from can, drained, rinsed
  • Ranch dressing

Preparation

Step 1

Season both sides of chicken with salt, 1/2 tsp cumin, and 1/2 tsp chili powder. Grill chicken.

Chop lettuce, bell pepper, tomatoes, avocados, and green onion. Rinse and drain canned black beans and corn. Combine all ingredients and toss. Add chicken.
