Ingredients

  • 3 medium baking potatoes, peeled and cubed
  • 1 cup coarsely chopped cauliflower
  • 1/2 cup sliced carrot or coarsely chopped cauliflower
  • 1/4 cup light dairy sour cream
  • 1/4 teaspoon salt
  • 2 tablespoons finely shredded Parmesan cheese

Preparation

Step 1

In a medium saucepan cook potatoes, cauliflower, and carrot, covered, in enough boiling water to cover for 15-20 minutes or until tender. Drain. Mash with a potato masher or beat with electric mixer on low speed. Add sour cream and salt. Mash or beat until combined. Season to taste with additional salt and black pepper. Top each serving with parmesan cheese.
