Hot Chicken Salad

Ingredients

  • 4 c chopped cooked chicken
  • 2 c chopped celery
  • 2 hard boiled eggs, chopped
  • 1-2 oz. jar pimentos, drained (optional)
  • 1 T finely chopped onion
  • 2 T lemon juice
  • 3/4 t salt
  • 1 c shredded cheddar cheese
  • 2/3 c sliced almonds, toasted
  • 1 can water chestnuts
  • 1 c mayonnaise

Preparation

Step 1

Combine chicken, celery, eggs, pimento, water chestnuts, onion, mayonnaise, lemon juice and salt. Mix well. Spoon into a lightly greased 12x8x2 baking dish. Cover and bake at 350 for 20-30 minutes. Sprinkle cheese over casserole and top with almonds. Bake uncovered an additional three minutes.
