SPICE CRUSTED STEAK

Ingredients

  • 1 # boneless lean sirloin 1" thick, trimmed
  • 3/4 tsp. salt
  • 1/2 tsp. coarse black pepper
  • 1/2 tsp. coriander
  • 1/2 tsp. cumin
  • 2 tsp. olive oil
  • 1 onion thinly sliced
  • 1 # mixed mushrooms, sliced
  • 2 tsp. chopped fresh rosemary
  • 1/4 cup dry white wine

Preparation

Step 1

Sprinkle steak with 1/2 tsp. salt, 1/4 tsp. pepper, coriander, and cumin. Heat 1 tsp. oil in large heavy skillet over medium high heat. Place steak in skillet; cook, turning once, until instant read thermometer registers 145F (about 8'). Transfer to cutting board and set aside. Meanwhile, wipe skillet out; add remaining oil and place over medium high heat. Add onion and cook until softened, about 5'. Add mushrooms and rosemary; cook, stirring until mushrooms are browned and tender, about 2'
Cut steak into 12 slices and serve with mushrooms,
