Ingredients
- 4 medium baking potatoes
- 1/2 cup dairy sour cream or plain yogurt
- 1/4 tsp garlic salt
- 2 slices American cheese, halved diagonally
Preparation
Step 1
Bake potatoes. Cut a lengthwise slice from top of each baked potatoe, discard skin from slice and place pump in a bowl. Gently scoop out each potatoe, leaving a thin shell. Add pulp to the bowl. With an electric mixer on low speed beat potato pulp. Add sour cream, garlic salt, and 1/8 tsp pepper, beat till smooth (if necessary stir in 1 to 2 tbs milk to make of desired consistency). Pile mashed potatoe mixture into potato shells. Bake 425 oven for 20 minutes or till lightly browned. Place cheese atop potatoes bake for 2 to 3 minutes more or till cheese melts.
