Ground Meat Jerky

Use any kind of lean meat

Ingredients

  • 25 lbs. lean meat
  • 1 lb. of jerky premix
  • 2 tbsp. prague powder
  • 2 tbsp. FOS B or Raphos 2000
  • 1/2 quart water
  • 1 tbsp. jerky spice per lb. of meat
  • 1/4 tsp. prague powder per lb. of meat

Preparation

Step 1

mix the above ingredients. Regrind 2 times. Stuff on to racks. Air dry overnight. Turn each strip over and cook at 180 degrees F. for approx. 3 hours. Smoke may be added for one last hour.
