cake, date, apple and walnut loaf

  • 1 sm. cooking apple
  • 4 oz soft margarine
  • 6 oz soft brown sugar
  • 2 eggs, lightly beaten
  • 4 oz wholewheat flour
  • 4 oz plain flour
  • pinch of salt
  • 1 1/2 tsp baking powder
  • 4 oz walnuts, roughly chopped
  • 3 oz pitted dates, roughly chopped
  • 3 or 4 tbsp milk

Preparation

Step 1

preheat oven to 350. butter a 3 1/2x 7 1/2 loaf pan.
put the margarine, sugar, eggs, flours, salt and baking powder into a lg mixing bowl (sifting the flours in) then whisk them together with an electric hand whisk until thoroughly combined. next add the apple, pelled, cored and roughly chopped, followed by the walnuts and pitted dates. finally add the milk, then mix it all well before transferring the mixture to the prepared tin. spread it out evenly, then bake for 1 hour or until the loaf feels springy in the center and a skewer inserted in the middle comes out clean.
let the cake cool for a min or 2 in the pan, then turn it out onto a wire rack. store in an airtight tin as soon as cool
